Podere Sapaio has announced the start of work on the new winery, designed by the Alvisi Kirimoto architecture studio, founded by Massimo Alvisi and Junko Kirimoto. The new building will be built among the rows of vines in Bibbona, a few kilometers from the Livorno coast, and is scheduled to open in 2027. Conceived as an immersive architecture, in deep harmony with the territory, the new winery will be entirely dedicated to the production of Sapaio, the iconic label and flagship of the company. A project that represents a key step in the evolution of Podere Sapaio, strengthening the contemporary identity of the brand.
Podere Sapaio: wine, landscape and craftsmanship
“Sapaio has reached a point in its evolution in which I felt the need for a space capable not only of hosting wine, but also of telling its essence,” says Massimo Piccin, founder of Podere Sapaio.
“I imagined a winery that can dialogue with the landscape and with our idea of agriculture, which is made of respect, listening and awareness. Sapaio’s production bears the mark of craftsmanship that borders on art: a gesture rooted in the land, but capable of rising and communicating with authenticity.”

Designed by the Alvisi Kirimoto studio, the project is called the Sapaio Pavilion: an architecture dedicated not only to winemaking, but also to tasting and celebrating the territory, in line with the philosophy of the company, founded in 1999 by Massimo Piccin and always oriented towards listening to the landscape and its enhancement.
Every natural element is intertwined with the architecture, becoming an integral part of its identity. The Pavilion was conceived as an open, porous, traversable organism, capable of entering into a relationship with the context and with the slow rhythm of nature.
The new building, over 1,000 square meters, will not be an object to be exhibited, but a living place where wine can tell its story in its most authentic form. The upper floor will host a panoramic terrace overlooking the vineyards, conceived as a space for tasting and contemplating the landscape. The lower level will house the vat room and the barrel room, integrated into the ground, in direct contact with the earth, testifying to a continuity between matter, agricultural gesture and architecture.
Inauguration scheduled for 2027
“With the Sapaio Pavilion we wanted to trace a founding sign suspended in the landscape, while respecting its profound identity and allowing ourselves to be guided by its natural and cultural characteristics. Not an isolated object, but a permeable place, where architecture welcomes the lights, sounds and rhythms of the countryside, transforming them into building material”, explains architect Massimo Alvisi, co-founder of the studio.
