Moncalisse unveils its new winery-sculpture: a contemporary temple for Trentodoc

The new Moncalisse winery opens: architecture, sustainability and top‑level wine tourism between Monte Calisio and Trentodoc bubbles.

Moncalisse officially opens its new winery, a structure that brings together architecture, landscape and an enotourism vision in the heart of Trentodoc. Designed by architect David Stuflesser with Nadia Moroder, the winery appears as a white sculpture emerging among the vineyards of Seregnano and Civezzano, blending with the sinuous lines of the surrounding landscape.

A project born from a sustainable and identity‑driven approach, conceived to offer an immersive experience: from guided tours to masterclasses, all the way to the new Bistrot dedicated to those who love design, the good life and sparkling wines. The journey is completed by the gastronomic proposal of chef Othmar Raich and by Moncalisse’s two Trentodoc wines, Montis Arcentarie Blanc de Blancs Extra Brut Riserva 2017 and Millesimato Extra Brut Riserva 2019.

An architecture that dialogues with nature and history

The new winery was born from a clear idea: transforming architecture into landscape. The circular shapes echo the profiles of the hillside, the dry‑stone walls and the ancient “Coppelle,” Bronze and Iron Age rock engravings found among the rows. A place rich in memory that now becomes a contemporary space.

“We tried to transform the primordial element of architecture — the wall — into an element of the landscape, making it float until it became a building,” says Stuflesser. The Moncalisse logo itself originates from the floor plan: a double symmetrical shape that recalls the letter “M” and the union of the founders, sisters Julia and Karoline Walch.

The journey continues underground, where the hypogeal structure plays with light and shadow. The 11‑meter‑high barrel cellar evokes a secular cathedral: solemn, deep, scenic. Here architecture meets technique, creating an ideal environment for the long ageing of Metodo Classico wines.

Function, sustainability and technical precision

Placing most of the volumes underground makes it possible to exploit the natural temperature of the soil, stable around 13°C — a perfect condition for sparkling‑wine ageing. Vinification also takes place by gravity, respecting the raw material and aiming to guarantee maximum quality.

Materials and colors tell the story of the territory. The red‑brown concrete with bush‑hammered porphyry recalls the local soil, while the white exterior plaster evokes limestone rocks and the purity of the “white pearls,” the bubbles. From the depth of the cellar, the path rises toward the south‑facing panoramic terrace, conceived as a place of rest and contemplation of the vineyard landscape.

“Origin and ambition, precision and depth, past and future mark this project,” say Julia and Karoline Walch. A balance that defines the identity of Moncalisse.

Excellence in wine tourism among architecture, terroir and sparkling wines

The new winery was created to welcome. Moncalisse offers a structured wine‑tourism experience that guides visitors through architecture, terroir and production philosophy. “With the opening of the new structure, we aim to give Moncalisse further momentum,” explain the Walch sisters. “We want to offer a place of experience where people can witness the wine production chain firsthand and enhance what makes our land unique.”

The context is strongly identity‑driven: 600 meters above sea level, on the slopes of Monte Calisio, in an area of geological and historical significance. The twelve hectares of high‑altitude vineyards benefit from a fresh, breezy Alpine microclimate, ideal for Chardonnay and Pinot Noir. At the heart of the estate lies a noble one‑hectare parcel with old Chardonnay vines and biodiversity protected with care.

For the inauguration, chef Othmar Raich of the Miil restaurant in Cermes created a gastronomic pairing for the two house Trentodoc wines: Montis Arcentarie Blanc de Blancs Extra Brut Riserva 2017 and Millesimato Extra Brut Riserva 2019.

Moncalisse: a new voice in the Trentodoc landscape

Founded in 2016 by Julia and Karoline Walch, Moncalisse is today one of the most interesting wineries in the Trentodoc panorama. Altitude, microclimate, geological diversity and long ageing define a style that is precise, elegant and deeply linked to the territory. The new winery marks a decisive step: a place that unites art, technique and hospitality to tell the story of the fine sparkling wines of Monte Calisio.
