The perfect combination from the aperitif to the entire meal: the Valdobbiadene Docg Superiore di Cartizze by Col Vetoraz
The grapes of Valdobbiadene Docg Superiore di Cartizze by Col Vetoraz grow on a soil of clay, marl and sandstone which guarantees an unusual concentration of aromas and great salinity.
Velvety and aromatic, with a subtle and elegant perlage and an intense aroma in which the delicacy of the mix of flowers and ripe fruit stands out, it comes from the best vineyards in the area of the same name adjacent to the company headquarters, whose limited extension (approximately 106 hectares) , limits production to small quantities.
A sparkling wine that this year has already obtained notable international recognition, such as the 90 points for James Suckling, and the 93 at the Falstaff Prosecco Trophy, while in Italy the Gold Medal at the Pramaggiore National Wine Competition.
The Superiore di Cartizze goes well with typical local traditional dishes, such as sopressa, but also with the most modern and refined cuisine.
Just like the recipes of three delicious appetizers specially designed by the Da Gigetto restaurant in Miane (Treviso) for Col Vetoraz.
- Beef tartare with sphere of sweet French onion and sweet and sour Tropea onion petal
- Potato tartlet with aubergine pâté
- Squid ink pillow with humus

In this case we thought partly of tradition but above all of the elegance of a beef tartare with a sphere of sweet French onion and a petal of sweet and sour Tropea onion; to the balsamic of the potato tartlet with aubergine pâté; and the subtle spiciness of the squid ink bread cushion with humus.
The intense aromas of flowers and yellow pulp fruit of Superiore di Cartizze harmonize with those of the sweet onion and counterbalance the taste of the aubergine. The velvety and rounded palate contrasts the sweet and sour onion, the bitterness of the aubergines and the bitter aftertaste of the squid ink. Finally, the freshness (acidity) that leaves a clean and dry palate is magical.
Located in the heart of the Valdobbiadene DOCG, the Col Vetoraz winery is located at almost 400 meters above sea level, at the highest point of the hill of the same name, part of the famous Cartizze hills. It is precisely here that the Miotto family settled in 1838, developing vine cultivation from the beginning.
In 1993 Francesco Miotto, descendant of this family, together with the agronomist Paolo De Bortoli and the oenologist Loris Dall’Acqua gave life to the current Col Vetoraz, a small winery that has been able to innovate and grow and achieve in just 25 years the pinnacle of Valdobbiadene Docg production both in quantitative and qualitative terms.
Great respect for tradition, deep love for the territory, extreme care of the vineyards and a scrupulous methodology of the production chain and the production of great cuvées: these are the secrets that over the years have allowed Col Vetoraz to obtain excellent wines and flattering results for most prestigious national and international wine competitions.
