La Table Polychrome: Maison Taittinger opens a restaurant in its historic location in Reims

An immersive experience between the art of blending, fine gastronomy and Champagne: Table Polychrome opens its doors, the new one-of-a-kind gastronomic and sensorial space by Maison Taittinger in its historic location on Place Saint-Nicaise in Reims. Much more than a 40-seat restaurant, open from Thursday to Monday from 12 to 15:30, a truly innovative project that invites visitors to experience the art of blending in a completely new form, in which Champagne, cuisine and creativity blend together in a polychrome tale of flavours, colours and culture. Led for the current year by Michelin-starred Chef Charles Coulombeau, winner of the Taittinger Signature International Cuisine Award 2020, diners will savour the art of pairing dishes inspired by culinary polychromy and the Maison’s different cuvées.

The Table Polychrome Experience

At Table Polychrome, each guest becomes the protagonist of their own personal and multisensory gastronomic experience with the help of original condiments, signature cheeses and fresh fruit-based desserts.

Open to all visitors to the Maison, but also to anyone who wishes to enjoy a new gastronomic experience in a unique place that invites you to explore a new dimension of the art of pairing, each dish is harmoniously paired with Taittinger Champagnes.

The Table Polychrome experience is inspired by the richness of the Maison’s 288 hectares of vineyards spread across over 40 Crus: it was, in fact, conceived as a tribute to biodiversity and celebrates ingredients from the various countries around the world to which Taittinger Champagne is exported, seasonal vegetables presented in various preparations, original condiments designed to enhance each pairing, exclusive signature cheeses born from the collaboration with an expert refiner and light desserts inspired by fruit and freshness.

Each year, a new chef will interpret their vision of polychromy, renewing the concept and offering new gastronomic perspectives. For 2025, Charles Coulombeau will lead a culinary journey in four seasons, the result of close collaboration with Vitalie Taittinger, president of the Maison.

A space between history, architecture and nature at the heart of Maison Taittinger

La Table Polychrome is the result of a bold and innovative project by architect Giovanni Pace: an extension of the historic Saint-Nicaise building that integrates harmoniously with the history of the place, preserving on the one hand the heritage of the 1930s and, on the other, drawing inspiration from the Saint-Nicaise Abbey that once stood there.

The design of this space does not simply respect tradition, but reinvents it, incorporating modern and refined elements into more classic elements, such as the peristyle.

The interiors, designed by Grégory Guillemain’s Homeage studio, combine elegance and functionality thanks to the use of materials such as glass, wood, leather and stone.

The restaurant opens onto a landscaped park designed by Triptyque / CDCP and conceived as a “living” painting in dialogue with the seasons.

The interior project is completed by the works of art by Sarah Walbaum and Simon Marq, who visually interpret the theme of assembly through plays on transparency, texture and colour, transforming each room into a true artistic installation.

Polychrome is not just a restaurant, but a place where architecture, art and gastronomy meet and complement each other, offering visitors an unforgettable experience in the Taittinger universe.

Polychrome Bar: Exploring the Taittinger Cuvées

Next to the Table, the Polychrome Bar, a 20-seat space open from Monday to Sunday (high season) from 11 am to 7 pm, offers tastings of the 10 Cuvées of the Taittinger collection, brought together for the first time in a single space.

Guests will be able to discover the different expressions of Taittinger Champagne paired with seasonal products and international offerings such as afternoon tea in a refined and convivial setting.
