A new sparkling wine, a symbol of excellence from a twenty-year-old vineyard with a bucolic name: Valle dei Prati. For a 100% Pinot Noir Classic Method that marks the debut, with approximately 3,500 bottles of the 2020 vintage, of the Blanc de Noirs Oltrepò Pavese Docg by Tenuta Mazzolino.

Blanc de Noirs, the new Metodo Classico Oltrepò Pavese Docg 100% Pinot Nero from Tenuta Mazzolino, debuts in 3500 bottles
Put a twenty-year-old Pinot Noir vineyard at about 200 meters above sea level, Valle dei Prati, which looks towards the North-East; add the idea of giving life to a surprising bubble; complete with the excellent consultancy of Dominique Le Boeuf, winemaker from Reims; these are the ingredients that gave life to the winning recipe from which the new Metodo Classico 100% Pinot Noir by Tenuta Mazzolino is born: the Blanc de Noirs Oltrepò Pavese Docg. The novelty, vintage 2020, takes shape from the sole “coeur” of the pressing: then, 36 months of rest on the yeasts, 10% in wood, up to 3.5 grams/liter of dosage, with disgorgement which took place in February of this year.
“It is a project that has distant roots and that we decided to realize only when we felt truly ready and satisfied with the result obtained,” emphasizes Francesca Seralvo, third generation at the helm of the estate since 2015. “Dominique Le Boeuf, winemaker from Reims, supported us in this path of excellence. The collaboration with Le Boeuf has transformed our way of understanding the Classic Method and the Blanc de Noirs is a perfect interpretation of it.”

There will be around 3,500 bottles of Blanc de Noirs and they will be released under the umbrella of the local DOCG. Starting next autumn, they will be added to the approximately 10,000 that Mazzolino already dedicates to the Classic Method. The identity card of this sparkling wine indicates a pale and brilliant golden yellow color, accompanied by a fine and persistent perlage.
On the nose, it offers a complex aromatic profile: from fresh floral notes to small wild red fruits and dried orange peel, the bouquet is completed with nuances of black pepper, flint and a delicate toasted note.
On the palate, this sparkling wine is taut, crystalline and sharp. A bubble of character – that only Pinot Noir can naturally give – expresses the calcareous minerality of the territory, with a long, savory and structured finish. A new dish from Oltrepò Pavese, perfect to accompany molluscs and crustaceans with sweet meat, baked turbot, truffle terrines, stewed rabbit and seasonal vegetables au gratin.
