The power of essentiality. To return to the origins in a symbiosis between the hand of man and the uncontaminated gifts of Nature. It is called Simbiotico and it encloses in the bottle a clear idea of making wine and at the same time respect for the land. It has been signed, since 2013, by Muratori, a winery led by the homonymous family in Adro (BS), which has chosen to bring out in this reference, even more than in its other labels, the identity of the Franciacorta territory. A different Classic Method sparkling wine that today comes in a 2.0 version. We tell you how the Franciacorta that does not contain sulphites by Muratori, which now also bears the signature of the oenologist Riccardo Cotarella, has changed.

Simbiotico: Muratori’s sulphite-free Franciacorta renews itself to stay young for longer
“We are a family deeply rooted in the Franciacorta area. For over 20 years we have been bringing our passion to the production of wines that reflect the values and identity of our history,” Michela Muratori begins. An experience that passes through the path of sustainable viticulture. “For us, this special production has always meant being in symbiosis with the land,” Michela Muratori continues.
The name Simbiotico comes from the concept of “mycorrhiza,” according to which different organisms carry out their life cycle by living in close contact and benefiting from each other. “We distributed mycorrhiza when we planted our vineyards between 1999 and 2000,” says Michela Muratori. “We have continued the practice by distributing it in the subsoil of our vineyards and on their foliage. This path explains our particular attention to the growth substrate of the plant. Today this attention is also reflected in the practice of green manure, in addition to organic management”.

From the vineyard, Simbiotico, 100% Chardonnay, is then completed in the cellar with a winemaking approach with the lowest possible impact, which avoids the addition of sulfur dioxide throughout the winemaking chain, from the moment the grapes arrive in the cellar until the moment of disgorgement. This is the secret of this sparkling wine so different from all the others: its essentiality, which is then reflected in an evolution that is unique to it, different from all the other Franciacortas of the Brescia winery.
“Simbiotico is the fruit of our great experience in winemaking without the use of sulfur dioxide. A unique Franciacorta, with delicate evolutionary notes. To be preserved and tasted with care”. A uniqueness that goes well beyond its being organic, as also highlighted by a label in which the wording “Contains Sulphites” is omitted: Simbiotico, in fact, contains only the sulfur dioxide produced during the alcoholic fermentation phase, an element that makes it different even in the subsequent evolutionary phase.
This last aspect is one of the most interesting when you approach it in the glass. It is a different maturation that Simbiotico shows from the first taste, enchanting for its openness and that evolution that the absence of sulfur allows it to achieve even with shorter bottle refinements. A Classic Method that you don’t have to wait for and that today, 12 years after its launch, is getting a makeover: in the guise of the bottle, but without forgetting the content.
“On the wine front, we have chosen, in accordance with the directives of our technical consultant, Dr. Riccardo Cotarella, who has been following us with his team of collaborators since the 2020 harvest, to promote a fresher and cleaner style than in the past, with the aim of favoring a lesser and slower maturation over the long term”, underlines Michela Muratori.
Simbiotico was born, in fact, “already evolved”, but today, in its 2.0 version, its youth will be prolonged for a longer time. A unique wine, as mentioned, to be tasted with extreme attention.
“It is born horizontal, but develops in breadth in its enveloping. On the palate you can immediately perceive the game dictated by evolution, but the finesse of the bubble harmonizes Simbiotico making it balanced and never opulent”.
A rich Franciacorta, therefore, but very drinkable, perfect as an aperitif, but which happily marries raw fish and vegetable-based dishes. A sparkling wine that is a mirror of its land, whose imprint is now also impressed on the new elegant label: another symbiosis, at first glance, between man and Nature.
