Tenute del Cabreo: the new winery in Chianti Classico ready in September 2024

The completion date of the works has been set: the new Tenute del Cabreo winery, in the heart of Chianti Classico, will be ready in September 2024. The project, commissioned to the Florentine architect Carlo Ludovico Poccianti by Ambrogio and Giovanni Folonari Tenute, focuses on the company’s strong bond with the territory it belongs to.

The new space will develop into three distinct environments. The first will be dedicated to the winemaking process in latest generation steel tanks, which guarantee perfect thermal control. The second will host a cutting-edge barrel room, where the temperature, humidity and air exchange will be kept constant over time, to promote the well-being of the wood. The third and final room will be the space where you can taste the wine in the very place where it is born: the tasting room, with the large central table for wine tasting, also perfect for the organization of exclusive events. Finally, between the barrel cellar and the tasting room there will be a real “library” of historical vintages from Tenute del Cabreo.

“With the new Cabreo cellar, our Supertuscans will have a privileged place of birth and maturation, a true cradle for the high sensorial profiles that are the distinctive feature of these wines – underlines the president Giovanni Folonari – The project will transform an ancient cellar in an almost sacred place for wine, where the centuries-old traditions of Chianti Classico will be perfectly integrated with the new needs for qualitative efficiency and technological value”.

The new Tenute del Cabreo winery will be the most authentic expression of the company values and the strong bond with the Chianti area.

“The fil rouge between the rooms of the new cellar will be the effect of the LED stage lighting on the dark colors of the walls, the burnished bronze for the environment that houses the steel tanks and the Pompeian red for the barrel cellar” , explains architect Carlo Ludovico Poccianti. “Interiors and exteriors will be built using exclusively Tuscan stone, handmade terracotta, wrought iron and wood fixtures: traditional materials that will integrate perfectly into the surrounding area, as requested by the clients”.

With the inauguration of the new cellar in September 2024, a further step forward will be taken in the real estate redevelopment process of Tenute del Cabreo, started in 2017.

In fact, the Estates host the two charming relais Borgo del Cabreo and Pietra del Cabreo, as well as the Cabreo Restaurant, entrusted to the art of the Arezzo chef Giacomo Rossi.

Tenute del Cabreo extends over two areas in the municipality of Greve in Chianti: the 60 hectares of Zano, of which 45 are planted with Sangiovese, Cabernet Sauvignon and Merlot, and the 15 hectares of Casa di Sala in Panzano in Chianti, planted with Chardonnay and Pinot Noir. For over 40 years the estates have been dedicated to the production of Ambrogio and Giovanni Folonari Tenute’s Supertuscans, including Cabreo Il Borgo Toscana Igt, Cabreo La Pietra Toscana Igt and Cabreo Black Toscana Igt.
