In a global market that is evolving and showing a growing demand for NoLo‑alcohol products, Caviro launches Tavernellow 3% Vol., the new partially dealcoholised sparkling wine entirely produced and bottled in Italy. A debut that strengthens the role of Italy’s largest wine cooperative as a pioneer in the low‑alcohol segment, thanks to the new dealcoholisation plant installed in Savignano sul Panaro (Modena)—an advanced technological facility resulting from an investment of over 1.8 million euros and designed to ensure the highest quality standards.

The dealcoholisation plant in Savignano sul Panaro, built in 12 months and covering 200 square metres, allows for a production capacity of up to 30,000 litres per day and an annual potential exceeding 9 million bottles. A technological leap that enables Caviro to lead a growing segment, offering a product that meets new consumption styles while maintaining a strong link with Italian winemaking tradition.

The new technology installed in Savignano sul Panaro is based on a vacuum‑evaporation and low‑temperature distillation process, capable of preserving the wine’s structure, aromas and sensory characteristics. The system makes it possible to produce NoLo wines with alcohol levels below 9% Vol., all the way to completely alcohol‑free solutions, opening interesting development opportunities both in Italy and abroad.

The project demonstrates not only Caviro’s innovative capacity but also its commitment to contributing to the evolution of Italian wine through an advanced technological model fully compliant with EU Regulation 1308/2013.

Tavernellow 3%: light bubbles for contemporary drinking

With an alcohol content of 3% Vol., Tavernellow represents the natural evolution of an iconic brand that has long interpreted market changes. The sparkling wine is produced through traditional vinification followed by a controlled partial dealcoholisation process, which reduces alcohol content while preserving the wine’s organoleptic balance.

A significant difference compared to fully alcohol‑free beverages, as this is a wine obtained through fermentation and only subsequently reduced in alcohol.

The product will be previewed at Vinitaly before arriving in large‑scale retail in two versions: a white made from aromatic grapes, described as fresh and harmonious, and a rosé from red‑berry grapes, defined as crisp and lively—both designed for informal consumption, from aperitivo to lunch with friends.
