A steamed dumpling that unites worlds: chef Speranzon’s creation

The core of the stand was a tasting journey showcasing a surprising encounter between East and Veneto. Chef Paolo Speranzon of Ristorante San Martino in Chies d’Alpago chose to start from a symbolic ingredient of the territory: sopressa veneta, the star of Col Vetoraz’s hospitality.

From this starting point came a steamed dumpling that evokes distant lands while enclosing a filling of sopressa di malga from the Valdobbiadene area. The preparation was completed with a sweet‑and‑sour saffron sauce from Alpago and delicate notes of coriander. The aromatic richness of the dish—its fattiness, softness, and natural sweetness—found a perfect counterpoint in the exotic nuances of the sauce, creating a refined and surprising balance.

The pairing with Valdobbiadene DOCG Superiore di Cartizze completed the experience. The wine’s freshness and effervescence balanced the richness of the filling, while its softness and immediate aromatic profile elegantly accompanied the spicy notes and sweetness of the dish. Col Vetoraz: a story that continues to grow in the heart of Cartizze

Col Vetoraz was born at the highest point of the hill of the same name, in the heart of the Valdobbiadene DOCG, at nearly 400 meters above sea level. The Miotto family settled here in 1838, beginning a viticultural tradition that today continues through the winery founded in 1993 by Francesco Miotto together with agronomist Paolo De Bortoli and oenologist Loris Dall’Acqua.

In just ten years, the winery reached the top of Valdobbiadene DOCG production, both in quantity and quality, vinifying over 2,300,000 kg of DOCG grapes per year and selecting a production of 1,250,000 bottles.

Today, thirty years after its founding, the challenge is to maintain this position through rigorous work: meticulous vineyard care, respect for tradition, love for the territory, and a scrupulous production method that has led to excellent results in the most prestigious national and international wine competitions.
