The new Cabreo Winery has been officially inaugurated in Greve in Chianti, an iconic project by Ambrogio e Giovanni Folonari Tenute dedicated to Supertuscans. The structure, designed by Florentine architect Carlo Ludovico Poccianti, represents a synthesis of Tuscan identity, technological innovation and immersive experience, positioning itself as a new benchmark for high‑end winemaking in the area. During the inauguration, the Mayor of Greve in Chianti, Paolo Sottani, awarded honorary citizenship to Ambrogio Folonari, recognizing his strategic contribution to enhancing the territory and to the renaissance of Tuscan wine through investment, entrepreneurial vision and deep local roots.
Founded in 2000, Ambrogio e Giovanni Folonari Tenute continues a winemaking tradition dating back to the late 18th century. Today, the company, led by Giovanni Folonari, brings together five estates that express the best of Tuscany’s doc areas: Nozzole in Chianti Classico, Cabreo for Supertuscans, La Fuga in Montalcino, Campo al Mare in Bolgheri and Vigne a Porrona in the Maremma.
A €7‑million investment for a new‑generation winery
Built with an investment of €7 million, the new Cabreo Winery has been conceived as a place where technology and respect for the wine coexist organically. The structure houses more than 300 wooden vessels — tonneaux, barriques and seasoned casks — and features stainless‑steel tanks for fermentation and storage, with a total capacity of 4,500 hectolitres.
The stacked tanks allow for the separation of the different vineyard crus, while the optical sorter, which analyzes each grape individually, ensures optimal quality during harvest. A dedicated archive also preserves the historic vintages of the Supertuscans produced at Tenute del Cabreo.

The inauguration of the winery completes our wine tourism project at Tenute del Cabreo, where we have created the two boutique relais Borgo del Cabreo and Pietra del Cabreo, as well as a restaurant that reinterprets traditional cuisine.”
Cabreo Winery: three spaces that tell the story of wine from vineyard to glass
The winery is organized into three distinct areas, designed to guide visitors through the production process.
The first is dedicated to fermentation, with state‑of‑the‑art stainless‑steel tanks equipped with advanced temperature control.
The second houses the barrel cellar, designed to maintain constant temperature, humidity and air circulation over time.
The third area is the tasting room, conceived as a place for meeting and storytelling, with a large central table that allows guests to taste the wine in the very place where it is born.
The winery also engages in a dialogue with the landscape through its architectural choices. Both inside and outside, local materials have been used, such as hand‑crafted Impruneta terracotta, wrought iron, natural wood and Tuscan stone, paired with contemporary elements like steel, burnished bronze and scenic lighting.
