This principle forms the foundation of the entire production philosophy of the company, which has always cultivated and harvested only grapes from the foothill band of the Conegliano Valdobbiadene hill system, on calcareous‑siliceous soils formed during the Tertiary era, rich in skeleton and ideal for achieving elegance and sapidity.

This area is very close to the mountains, which protect the foothill zone from cold northern winds, and during the summer period it benefits from strong day‑night temperature variations, a fundamental condition for preserving aromatic expression and maintaining the acidic balance of sparkling wines.
The grapes are harvested strictly by hand in order to preserve the integrity of the fruit, and in quantities deliberately greater than required: this allows the selection of only the best grapes, thereby expressing the highest level of quality demanded by the Col Vetoraz standard.
Furthermore, the company is structured to vinify the grapes from each vineyard separately, in order to evaluate the specific characteristics and potential of each individual batch before the creation of the large cuvées. Finally, Col Vetoraz wines undergo no fining treatments. This guarantees the preservation of the aromatic and structural integrity of the fruit, developing a natural degree of roundness and an enveloping, creamy expression of carbonation.
