The new wine, which chose Milan and the Michelin‑starred cuisine of Iyo Kaiseki for its debut, represents the synthesis of the Treviso winery’s dual identity: Prosecco tradition and the enhancement of lesser‑explored native varieties. The choice to work with a blend of 85% Glera and 15% Manzoni Bianco reflects a precise balance between recognizability and experimentation.

On one side, the freshness and immediacy of Glera; on the other, the structural complexity of Manzoni Bianco, a variety that expresses acidic tension and mineral depth.

Sottosopra is born in the Grave di Papadopoli, Italy’s largest river island, an area characterized by gravelly and sandy soils derived from the Piave’s alluvial deposits.

This is where the wine finds its identity, translating the pedoclimatic context into a profile that combines energy and aromatic definition.
